Meet Christophe Choisy who owns Acapella winery in Pomerol, St Emillion. We had lunch with Christophe and he explained his philosophy about wine making and about his wine. He uses some organic techniques but said that organic practices won’t always allow for the results he wants in the vineyard.
His wine was so fresh and bright and complex that I could have sipped it all day. You would never get tired if this wine as it is not over done and what we say in wine world over extracted.
